WINES

Wine – lat. vinum - is an alcoholic beverage that is made from the fermented juice of grapes. A distinction is made between red, white and rose wine. By specific oenological removal methods during storage numerous biochemical maturation processes may form a highly complexness and also cause that some wines are aged for decades and are durable.

Over several millennia have countless varieties in the growing areas, developed by natural crossing and following selection through targeted crossing of one or more varieties. The different varieties allow, especially if they are well suited for a location, the vinification of differentiated qualities of wine. Of nearly 16,000 known varieties only about 1,000 varieties in the official lists are approved for viticulture worldwide. In many wine regions wines are varietal. In some wine regions such as Bordeaux or Chianti, however, a tradition of blending different varieties has developed historically.

The quality level of the wine is prescribed by the wine law specifying the wine quality. Details are subject to national wine laws, therefore, the quality levels are difficult to compare internationally. Quality levels of the wines are determined in the countries and regions through a variety of different criteria.
The most important criterion in Austria and Germany for the classification of wines in the various quality levels are the output, must weight or the natural alcoholic strength as a measure of the maturity of the grapes (wine without origin, land wine, Quality wine, Prädikats wine).

In the WINEFORUM online vinothek you can choose your desired wine by different criteria/categories (wine country, wine region, winery, varietal, bottle size).

ROSÉWINES

Rosé wines are very light colored wines produced from blue or red grapes that are produced like white wine. The berries are not or are only a few hours on the skins here. Depending on the intensity of contact with the skins, rosé wine is any shade. The color ranges from salmon pink to cherry red.

RED WINES

Red wine is made from blue grapes. Besides the used type of grapes, it differs also in the manufacturing process of white wine or rosé.
In the classical manufacturing process, the extraction of the desired components from the solid parts (shell, core, stem structure) takes place during the mash fermentation, the duration can be determined individually. In short duration fruity wines produced without potential for aging. By prolonged maceration, the proportion of leached tannins and phenols in the wine growing rapidly, thus allowing the development of a large warehouse wine.
For several decades, the malolactic fermentation, called malolactic fermentation for a variety of red wines is deliberately initiated. The red wines are characterized in taste rounder and softer. However, the method is not ideal for any red wine.

WHITE WINES

White wine is made by alcoholic fermentation of grapes with light flesh. The color of the grape variety can be both white and red. The large variety of White Wines results from the interaction of available varieties, various methods of wine making, as well as different levels of residual sugar.
The white grape varieties, but are actually of green, yellow or even bright red color, are grown in almost all wine-growing regions.
To achieve sweet white wines, the alcoholic fermentation is stopped before the implementation of the total sugar content of the must into alcohol.
White wine is also the predominant base of the sparkling wines production.
Compared to the process of producing a red wine vinification of white wine is less complicated.

ORGANIC WINES

The Ecological viticulture - wine is called as biological or biological-organic wine - protect in special measures the ecosystem.

Important is the holistic view of the agricultural operation. On one hand, the resistance of the vines, etc. strengthened by proactive measures against diseases. On the other hand, strictly respected a natural soil fertility - including by planting fertilization.

The demand for "organic wine" is, by changing eating habits a growing eco-conscious generation, steadily rising.

In this category you will find "organic wine" and "organic wines" from national and international wineries.

PRÄDIKATSWEINE ( SWEET WINES )

Prädikatswein is the highest level of excellence wines.

According to the Austrian Wine Law, Prädikatsweine belong to following subgroups: Spätlese, Auslese, Beerenauslese, Ausbruch, Trockenbeerenauslese und Eiswein

According the German wine law, a distinction is drawn between Kabinett, Spätlese, Auslese, Beerenauslese, Trocvkenbeerenauslese und
Eiswein

MODIFIED WINES

RARITIES

Under rarities we understand 'treasures trove', with (only) limited availability, are simply unique or have already achieved and/or ideal drinkability.

HALF BOTTLES

Often the content of a 0.75 liter bottle is for individuals, but also for couples too much. Of the next few days the rest in the bottle is often a risk that the liquid oxidized and hence inedible.

For many wines, especially   reds, the process of oxidation begins from the third day. Up to this point, that is, the bottle should be depleted.

Wine connoisseur in such cases open a 0,375-liter bottle half as remedy.

LARGE BOTTLES

Large bottles achieve great attention and give wine connoisseurs pleasure.

Large bottles are a exquisite gift and are ideal for a particularly long storage, because the bigger the bottle, the slower is aging of the wine.

The bottle sizes: Magnum (1.5 L), Double Magnum or Jeroboam (3.0 L), Rhehoboam (4.5 liters), Methuselah (6.0 l), Salmanazar (9.0 liters), Balthazar (12.0 l), Nebuchadnezzar (15.0 l), Melchior and Goliath (18.0 l)
